Flapjack biscuits

These are oat and raisin biscuits but basically they are flapjacks backed as individual biscuits. Very easy to make and something that children can help you with.

Being by putting100g plain flour, 100g sugar and 75g oats into a bowl with 1 tsp bicarbonate of soda.

Mix these all together.

Put 100g butter and 2 tbsps golden syrup in a bowl.

Microwave for about a minute until the butter has melted and then give it a quick stir.

Add this to the dry ingredients and mix together to make a fairly wet dough together with a large handful of sultanas (about 40g if measuring)

Break off small pieces and roll into balls and place on a baking tray (well spaced out).

Bake at about 160 degrees (fan oven- put it up to about 180 if not using a fan oven) for about 10 minutes until they are golden. They will continue to slightly cook and harden even when you take them out the oven.

Lovely served warm from the oven but still great when cooled (and store quite well in an airtight container).
