Blondies

An alternative to brownies- these are slightly less rich but just as yummy.



Begin by melting 110g of butter with 3 good tbls crunchy peanut butter (you can omit this if you are worried about nut allergies). Then add 1.5 cups of dark brown packed sugar and stir til it dissolves in the butter.

Add two eggs and 1 tsp vanilla extract and stir.

Then add 1.5 cups of plain flour and 0.5 tsp baking powder an again stir well.

Now add in whatever additions you fancy- dried cranberries, chopped nuts, raisins, chocolate drops, dash of alcohol (rum, baileys for example).

For this batch I added 0.5 cups of butterscotch chips and an 80g pack of white chocolate buttons. Mix in your additions and then pour into a 12 x 9 baking tray lined with grease proof paper.

Bake at 180 degrees for about 18 minutes. Allow to cool and cut into squares. Makes about 30 squares. Serve on its own or with ice cream for a real treat..
