The perfect Victoria Sponge


I am definitely a chocolate cake girl but my husband requested a victoria sponge for fathers' day and I must admit for summer I am kind of converted.

Begin by blending together 225g each of butter, caster sugar and self raising flour with 4 large eggs and 2 tsps baking powder. Divide the blended mix between two lined 8inch cake tins and bake at 160 degree fan (or 180 not) for 25 mins until well risen.

Turn out and allow to cool.

When cool spoon over 4 tbsp strawberry jam on one of the cakes and smooth to the edge and then about the same amount of whipped double cream. Then top with the other cake and sprinkle with icing sugar. If you are making the cake in advance sprinkle with icing sugar when just about to serve since it can sink into the cake.



These can also be made in minature. Bake tray bakes of the same mix and allow to cool. Use round cutters to cut out circles which can then be cut in half and filled in the same way. These will heat up quickly so store in the fridge overnight if not eating the same day. Here I also made minature chocolate cakes and white chocolate and banana mudcakes.
