Try cooking halved butternut squash with a nob of butter in the centre and a tbsp of orange on a low oven for an hour. then it just scoops out and you don't have to chop it up raw! We've got really into Thai cookery ...I love it! We've got really into Thai cookery since becoming vegans and I've been conquering my hatred of butternut squash as a result (I don't mind the taste but I think it smells like butcher shops when I'm chopping it up). I'll definitely give this a try when I feel better, although I may have to cheat with the actual ingredients! ;)<br /><br />Love the change to your blog too.
